What is cassava flour?
It’s obtained from the root of the cassava plant, which is crushed, pressed, dried and milled to make fine cassava flour.

1 1/4 cups Lotus Organic Cassava Flour
Coconut oil (to cook)
In a blender, combine the bananas, eggs and Lotus Organic Cassava Flour. Puree until smooth, scraping down the sides as needed. Your mix should be a thick but pourable batter, add a spoonful more flour if too thin or a spoonful of water if too thick. In a large frying pan, warm coconut oil and when hot add large spoonfuls of your mix to the pan. Cook for 2 minutes or until starting to bubble, flip and cook the other side. Serve with your favourite toppings.
